This first thing that strikes you about this exciting wine is its clarity and brightness. Blended from 95% of England’s signature grape, Bacchus, with a ‘dash’ of Pinot Gris. What a nose. Lots of elderflower with a balance of citrus and then the palate opens up with a welcome ripeness from the Pinot Gris. The mouthfeel is smooth and velvety and the well balanced and crisp acidity creates a cool freshness - a complexity not found in similar examples of Bacchus. Rose, elderflower, lemon, lime with a subtle peachiness coming though on the long and elegant finish. This wine reflects harmony from vineyard to bottle. Brilliant Bacchus, brilliantly made.

Vinification
These grapes are hand picked into very small crates so the bunches are not damaged. The grapes are taken directly to the winery only 20 minutes away from the vineyard and go straight into the press as whole bunches. The juice is fermented in stainless steel tanks with temperature regulation jackets, temperature sensors and carbon dioxide sensors and the fermentation rates are controlled automatically so that the fermentations are slow and gentle to ensure maximisation of the flavours.
